This was one of my MIL's recipes. Very light!
Glorified Ginger Bread 375░ 9X9ö square pan
Mix together:
2 cups flour
1 cup sugar
1/2 cup soft butter
1/2 tsp. ginger
1+1/2 tsp. cinnamon
1/2 tsp. allspice
1 tsp. baking soda
1/2 tsp. salt
1 egg
2 Tbsp. dark Brer Rabbit molasses
1 cup sour milk (just add a few Tbsp. white vinegar to
regular milk to sour it.)
Cream butter and sugar.
Add spices to the flour. Mix into the creamed mixture.
Set aside 1/2 cup for topping.
To remaining mixture add baking soda and salt. Blend.
Add egg, molasses; then sour milk.
Pour into 9X9: square pan, 2ö deep.
Sprinkle crumb mixture on top.
Bake 375░ for 45 - 60 minutes.
Serve with Orange fluff or Lemon Sauce. Recipes below:
Orange Fluff Yield: approx. 2 cups.
3-4 egg yolks or 2 whole eggs
1/2 cup sugar
1/3 to 1/2 cup orange juice (1 orange)
1 Tbsp. orange rind
1 cup whipped cream
Mix egg yolks, sugar and O.J. in top of double-boiler.
Cook over hot water, stirring constantly until thickened
(15 minutes.) Stir in orange rind. Cool.
Fold in whipped cream.

Lemon Sauce 6 servings
1 pkg. lemon pudding/pie filling
1/2 cup sugar
3 cups water.
1-2 Tbsp. butter.
Mix contents of lemon filling pkg. with sugar.
Gradually add water; bring to boiling point over low heat,
stirring constantly, until sauce thickens. (about 5-6 minutes).
Add butter. Stir.
Serve hot on gingerbread, cottage or apple pudding, etc.
